I feel you on the separation anxiety! We were apart for 18 months during K1 processing. It's hard but you'll get through it. For your question about spouse visiting US - it's risky. With a pending immigrant petition, a tourist visa might be denied for immigrant intent. Most attorneys recommend against it unless there's a compelling reason.
