I got the exact same RFE! The specialty occupation RFE is so common now. You NEED an expert opinion letter - that's what saved my case. Find a professor from a reputable university in your field who can write a detailed letter explaining why the job requires specialized knowledge. Also, make sure your job description in the RFE response is SUPER detailed. Break down every duty and show how it requires your specific degree.
